What you never store cannot leak
It is the cheapest control there is and the one least often applied. A form that asks for date of birth, address and ID number just in case turns your product into something that genuinely has to be protected. Every field is justified or dropped, and most get dropped.
Real data stays out of the test environment
Copying the production database into staging is quick and it is the silliest leak you can have: the same data, with half the protection and three times as many people with access. You generate fake data or anonymise it, and you do it on day one.
Roles get designed up front, not bolted on later
A product that starts out assuming everyone sees everything does not gain permissions by adding a new screen: you have to rewrite how it queries the data. At this stage that is a few hours; with customers inside, weeks of work. It is the technical debt that ages worst of all.
An MVP ships with headers too
The same half hour of configuration costs the same here as it does on a finished product. The difference is that at this stage almost nobody spends it, and then the first demo to a customer runs on a site with no forced HTTPS and no content policy.
